When I served in Denholms we had a Scottish/Egyptian Chief Steward.   
He used to prepare an Eggplant Salad comprising sliced  
eggplant,sliced onion and garlic, all in vinegar.  I keep looking for  
the recipe as it was delish!  If anyone knows the recipe I would be  
grateful.
