G'day folks,

When Mike was here we were given a parcel of prawns. I asked a friend  
of mine for a recipe - she did better than that and actually made the  
following sauce for us.

Molly’s Prawn Curry


Shell the prawns and de-vein them (see note below).

Place 1/4 inch of oil in the bottom of a saucepan.

Put in:

1/4 teaspoon black mustard seeds.

Fry in the saucepan - turn down the heat as soon as the mustard seeds  
start to ‘pop’.

Add:

1/4 teaspoon fenugreek.

1 dozen curry leaves (if you have them).

2 medium onions diced small.

Cook the onions on a ‘slow’ heat  until the onions become ‘glassy’ and  
golden brown.


While the onions are cooking:

Take one lime and place in the micro-wave oven for 10 sec - squeeze  
lime. add the juice to the pan. If you haven’t got access to a lime  
you may use the juice of half a lemon or even lime juice from a bottle  
(do not add too much juice or the sauce will be too bitter).


Next:

Mix the following in a saucer with some hot water to make a paste.

3/4 teaspoon of tumeric:

1/2 teaspoon chilli powder (more or less - to suit).

1 and 1/4 teaspoon jheera (cummin powder).

1 and 1/4 teaspoon dhania (coriander powder).

1 teaspoon of rock salt (to taste).

2 teaspoons of minced garlic (from a jar).

2 teaspoons of minced ginger (from a jar).

Add the spice mixture and the lime juice to the pan and fry altogether.

Stir well. When it gets hot add a little water to the pan to stop the  
mixture sticking to the bottom of the pan and burning.

When the oil rise to the top of the marsala the marsala is cooked.

Stir in a can of coconut milk.

You may leave it to cool while you are preparing the prawns.

Heat the sauce when ready to serve.

The rice should be cooked before heating the sauce.

‘Cook’ your popodums.

The prawns should be added to the hot sauce three minutes before you  
serve the rice and sauce, otherwise the prawns will ‘bloat’ and be  
soggy to eat.
