Colin,

1.  It's an illusion - the beer ain't coming out of the iPad.
2.  Hence the beer is coming from somewhere else.
3.  The supply pipe isn't inside the stream of beer, which is the way a famous "perpetual motion" trick was done.
4.  Hence the beer is coming from his right hand, probably via the handle and a pipe down his sleeve from a container.

Houdini's tricks were illusions, well prepared in advance, nothing left to chance.  His art lay in concealing the initial stages.  The gent with the iPad will also have taken steps.
