I believe the Scots dance style was pretty much like that before the French ballet influence crept in with its pas des bas, etc.  It was all hands to the sides and fast foot movements.  Some areas up north still retain the old style.  A few years back, we were in a "cowboy bar" in Tucson, Az, and they danced a variation of that style in high-heeled boots.
