Channa Dhal - 2 tablespoons
Corriander seeds - 1/2 tablespoon
Black peppercorns - 1 tablespoon
Cumin seeds - 1 1/2 teaspoons
Dry chillies - 3 large ones
Methi seeds - 1/4 teaspoon
Dry roast all the above ingredients, stirring all the time, until the
channa dhal turns a golden brown. Cool completely then grind to a fine
powder.
Tamarind - 1 small lime sized ball soaked in 4 cups of warm
water
Tomatoes - 3 medium, chopped
Corriander leaves - chopped
Tumeric - 1/4 teaspoon
Curry leaves - 3 sprigs
Asafoetida powder (HIng) - 1/4 teaspoon
Put the tamerind water in a pot and bring to the boil.
Put in the curry leaves, tomatoes, hing , haldi & ground spice powder.
Add salt to taste.
Remove from heat when tomatoes are cooked.
Enjoy this with rice

2nd Pepperwater recipe
1/2 teaspoon chilli powder
1 1/2 tablespoons corriander powder
1/2 tablespoon cumin powder
3 garlic cloves, mashed
2 green chillies, chopped
2 or 3 tomatoes, chopped
1 large onion, sliced
salt to taste
1/2 tablespoon tamerind soaked in 4 cups of warm water, well mashed &
strained.
Put all the above into a pot and bring to the boil. While the above is
boiling prepare the ingredients below for frying.
For the tadka or bhoono:
1 teaspoon mustard seeds
3/4 teaspoon black peppercorns
A handful of curry leaves
1/2 teaspoon methi seeds
1 teaspoon cumin seeds
1/4 teaspoon haldi powder
2 cloves garlic finely chopped or sliced
1 tablespoon urad dhal
2 dried red chillies, broken into 6 pieces
1/2 teaspoon asafoetida powder
Heat 2 tablespoons of ghee or oil in a fryingpan & fry all the above
ingredients till the mustard seed start spluttering & the garlic turns
golden brown. Pour this into the pepperwater & boil for a minute or 2.
Remove from the heat.
Enjoy.
