Like all such "intelligence" tests, it is based on the mistaken assumption that there is only one solution.  I believe this one appeared a test for Alzheimers.  Each word contains precisely two letter pairs that are mirror images, eg, potato has ot and to, assess has ss and ss.  I rest my case.
