Once you accept it ain't magic or telepathy, and that 90% of what you see is there to confuse you, the rest will succumb to careful thought. Many of them are based on "sieves" or hidden patterns.  One I used to know involved dealing out 20 cards at random into a 4x5 pattern then reconstituting the pairs from memory.  The 20 card deck was shuffled and handed to the dealer who dealt them onto the pattern in pairs after showing them to the audience who noted each pair. To the dealer, the pattern lines 1 to 4 were visualised as MATAS DEDIT NOMEN COCIS.  Each letter appears twice, so he dealt the cards placing each pair on the same letter, then if anyone picked a card he could immediately pick its partner in the pair.  Since the cards could be dealt on paired positions in any order, even the most careful onlooker would fail to see a pattern.
